THE BASE
- 1 medium sized onion roughly chopped
- 6-8 halved cashew nuts
- 1 medium sized green chili
- 5-6 cloves of medium sized garlic cloves
- In a pot, add 1 teaspoon of oil and a bay leaf to it.
- Add to the pot - any vegetable of your choice, chopped finely and sautee it for a few minutes.
- Most preferred veggies - Broccoli, mushrooms, cabbage, cauliflower, carrots, sweet corn, french beans, peas, and paneer.
- After the veggies are sauteed, add your base. Add water accordingly,
- Add salt. Let the soup boil for few minutes.
- If you prefer, you can also use corn starch slurry to make the soup more thicker.
- You can also add finely chopped coriander leaves for the extra freshness.
- Finally add freshly ground pepper and turn down the flame.
